Recipe of the Week: Hominy with Eggs

This Ecuadorian breakfast would make a great Sunday brunch entree and could earn you up to 430 Points!

Ingredients
  • Extra Virgin Olive Oil
  • Minced garlic
  • Small yellow onion, chopped (Earn 3 Points)
  • 1 and 1/2 teaspoons Dash® Seasoning Salt, Original, 2.5 oz (Earn up to 340 Points)
  • White hominy, rinsed and drained
  • 1/4 cup milk
  • 4 eggs (Earn 29 Points)
  • 2 teaspoons cilantro, chooped
  • 1 teaspoon chives, chopped
  • GOYA® Queso Blanco, sliced (Earn 58 Points)
Directions

Step 1

In a large sauté pan, heat the oil over medium heat, add the chopped onions, garlic, Mrs. Dash seasoning , and cook until the onions are soft, about 5 minutes.

Add the hominy, stir in well and cook for another 2 minutes, add the milk and cook until the milk is almost all absorbed by the hominy.

Step 2

In a separate bowl, whisk the eggs; add them to the hominy, stir well until eggs are cooked; about 5 minutes.

Stir in the chives and cilantro and season with Mrs. Dash seasoning to taste.

Step 3

Serve hot with queso fresco slices.
