Ingredients
- 1 cup Farro
- 1 cup Arugula
- 1 can Wild Planet Wild Sardines (earn up to 680 Points)
- 1/2 cup Cucumbers, chopped (earn 3 Points)
- 1/2 cup Tomatoes, chopped
- 1/4 cup Feta
- 1/4 cup Kalamata olives, cut in half
Lemon Feta Dressing
- 1 medium Lemon, juiced
- 2 Tbsp Extra virgin olive oil (earn 9 Points)
- 1 Tbsp Feta
- 1/4 tsp Oregano
- 1/4 tsp Salt
Directions
Lemon Feta Dressing
- In a blender combine all the dressing ingredients (lemon juice, olive oil, feta, oregano, and salt) until smooth. Alternately if opting to not use a blender, crush the feta in a bowl. Once smooth add the remaining ingredients and mix.
Salad Assembly
- Add all the ingredients to a bowl and top with the lemon feta dressing. Toss to coat and serve.
