Recipe of the Week: Loaded BBQ Baked Potatoes

This week’s easy recipe can be a savory side for your next holiday potluck or a meal in itself and will earn you up to 1,029 Points!

Ingredients

  • 25 baked potatoes (approx. 5 oz. each) (earn 3 Points)
  • 3.25 lb. Pulled Pork, heated (earn up to 1,020 Points)
  • 25 oz. barbecue sauce
  • 1 1/2 lb. shredded low fat Monterey Jack cheese (earn 3 Points)
  • 25 oz. low fat sour cream
  • 1 cup chopped fresh chives

Preparation

  1. Slice potatoes across top and squeeze open.
  2. Fill each potato with 2 oz. pork, 1 oz. each barbecue sauce and sour cream, and 1/2 oz. cheese. Sprinkle with chives before serving.
