Ingredients
- 25 baked potatoes (approx. 5 oz. each) (earn 3 Points)
- 3.25 lb. Pulled Pork, heated (earn up to 1,020 Points)
- 25 oz. barbecue sauce
- 1 1/2 lb. shredded low fat Monterey Jack cheese (earn 3 Points)
- 25 oz. low fat sour cream
- 1 cup chopped fresh chives
Preparation
- Slice potatoes across top and squeeze open.
- Fill each potato with 2 oz. pork, 1 oz. each barbecue sauce and sour cream, and 1/2 oz. cheese. Sprinkle with chives before serving.
