Recipe of the Week: Cocoa Whey No-Bake Cookies

How about getting some necessary protein packed in a delicious treat? Even better: how about earning up to 2,040 Points with this easy no-bake recipe?

Ingredients:

  • 1 cup creamy, natural peanut butter or almond butter (no added sugar or oils)
  • ½ cup honey
  • ¼ cup butter, ghee or coconut oil
  • 2 t sp vanilla extract
  • ¼ cup cacao powder
  • 2 scoops Vital Performance™ Chocolate Protein (earn up to 1,700 Points)
  • 2½ cup whole rolled oats (earn 340 Points)

Directions:

  1. Add the peanut butter, honey, butter, and vanilla extract to a medium saucepan. Place over medium heat and stir until melted.
  2. Remove from the heat and add the cacao powder, protein powder and whole rolled oats. Stir vigorously until well-mixed.
  3. Use a cookie scoop to drop balls of the dough onto a lined sheet pan. Place in the freezer or refrigerator until firm, about 15 minutes. Store in a sealed container in the refrigerator for up to two weeks.
