Recipe of the Week: Italian Chicken Cheese Rollups

With just seven ingredients and less than an hour, you can serve up this delicious, low calorie, low fat dinner. Plus earn up to XXX Points!

INGREDIENTS

  • 4 boneless skinless chicken breasts (earn 3 Points)
  • 1teaspoon dried basil (earn 255 Points)
  • 14teaspoon pepper (earn 255 Points)
  • 14teaspoon salt (earn 255 Points)
  • 4 (1 ounce) part-skim mozzarella string cheese (earn up to 425 Points)
  • Cooking spray (earn up to 255 Points)
  • 1 cup tomato sauce

DIRECTIONS

  1. Preheat oven to 350°F.
  2. Place each chicken breast between 2 pieces of heavy-duty plastic wrap, pound to 1/4 inch thickness using a meat mallet or rolling pin.
  3. Combine basil, salt and pepper; sprinkle half of mixture evenly over both sides of chicken.
  4. Place 1 string cheese stick across the center of each flattened chicken breast. Roll up chicken jelly roll fashion, starting with short end. Place chicken roll-up, seam side down, in an 11 x 7 inch baking dish. Sprinkle with remaining half of spice mixture, and coat with cooking spray. Cover and refrigerate up to 8 hours.
  5. Pour tomato sauce over chicken. Bake uncovered, at 350F for 35 minutes or until chicken is done and tomato sauce heated.
