Recipe of the Week: 3-Step Lemon Cheesecake Bars

This quick and tasty treat is like taking a bite of sunshine — plus you’ll earn up to 434 Points!

INGREDIENTS

  • 1-1/2 cups soft coconut macaroon cookie crumbs
  • 2 Tbsp. butter, melted (earn 3 Points)
  • 2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened (earn up to 425 Points)
  • 1/2 cup sugar
  • 1/2 tsp. zest and 1 Tbsp. juice from 1 lemon (earn 3 Points)
  • 1/2 tsp. vanilla
  • eggs (earn 3 Points)

DIRECTIONS

  1. Heat oven to 350°F.
  2. Combine cookie crumbs and margarine; press onto bottom of 8-inch square pan sprayed with cooking spray.
  3. Beat cream cheese, sugar, lemon zest, juice and vanilla in large bowl with mixer until blended. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.
  4. Bake 20 to 25 min. or until center is almost set. Cool completely. Refrigerate 3 hours.
