Recipe of the Week: Sausage and Egg Casserole

Start your brunch off right with a delightful Sausage and Egg Casserole that will satisfy both your savory and hearty cravings. This delicious combination of golden-brown sausages, fluffy eggs, and melted cheese will leave your taste buds begging for more plus earn up to 865 Points!

Ingredients

  • 2 lb. pork breakfast sausage (earn up to 850 Points)
  • 1 small sweet onion, diced (about 1 cup) (earn 3 Points)
  • 8 oz. mini sweet peppers, diced (about 1 cup)
  • 12 eggs (earn 3 Points)
  • 1 cup sour cream or Greek yogurt (earn 9 Points)
  • ½ cup heavy cream
  • 1 ½ cups shredded sharp Cheddar cheese, divided
  • 1 tsp. salt
  • ½ tsp. black pepper

Directions

  1. Preheat oven to 350°F. Lightly coat a 9- x 13-inch baking dish with nonstick cooking spray.
  2. Heat a large skillet over medium heat. Add sausage and cook, breaking it into bite-size pieces using a wooden spoon. Cook until brown and slightly crispy on some pieces, 12 to 15 minutes. Drain off most of the grease, and set aside. Do not clean out skillet.
  3. Add peppers and onions to the same skillet over medium-high heat, and sauté for 2 to 3 minutes. Remove from heat, and set aside.
  4. Combine eggs, sour cream, heavy cream, 1 cups cheese, and salt and pepper in a large bowl. Whisk until well combined. Add the sausage and peppers and onions to the bowl with the egg mixture. Whisk everything to combine.
  5. Pour mixture into prepared dish. Top with remaining 1/2 cup of cheese. Bake for 20 to 30 minutes or until the edges are set.

Tips

This Sausage and Egg Casserole can be stored in the fridge and enjoyed for up to 5 days.
