Recipe of the Week: Taco Soup

What’s more satisfying than a hot bowl of soup on a cold winter’s day? This delicious soup combined the tastiness of tacos with the comfort of soup and can earn you up to 525 Points!


  • 2 tbsp olive oil
  • 1 1/4 lbs lean ground beef (earn 3 Points)
  • 1 medium onion, chopped (earn 3 Points)
  • 2 cloves garlic, minced
  • 1 jalapeno, seeded and finely chopped
  • 2 (14.5 oz) cans of diced tomatoes with green chiles
  • 14 oz of low sodium beef broth
  • 8 oz tomato sauce
  • 1 1/2 cups Whole Kernel Sweet Corn, drained
  • 1 (14.5 oz) can of black beans, drained and washed
  • 1 (14.5 oz) can of pinto beans, drained and washed
  • 1 packet of Ortega Taco Seasoning (earn up to 510 Points
  • salt & pepper, to taste
  • cilantro, chopped
  • lime juice (earn 3 Points)
  • sour cream (optional) (earn 9 Points)
  • cheddar cheese (optional)


  1. Heat large pot on medium-high heat and add oil.
  2. Add lean ground beef and chopped onion. Cook until ground beef is browned and onions are translucent. Add chopped jalapeno and minced garlic and cook until fragrant. (about 1-2 mins)
  3. Stir in beef broth diced tomatoes with chiles, tomato sauce, corn, pinto beans, black beans and Ortega Taco Seasoning. Cover pot with lid and let simmer for 30 mins or until beans are soft.
  4. Stir in chopped cilantro and lime juice. Serve hot and top with sour cream or cheddar cheese, if desired. Enjoy!
