Recipe of the Week: Breakfast Sandwich with Avocado

Although it’s labeled as a “breakfast” sandwich, there’s no reason this delicious combo of eggs and avocado can’t be enjoyed for brunch, lunch or dinner. Whip this up for four people in under 20 minute plus earn up to 1,894 Points!

INGREDIENTS

  • 1/4 cup Hellmann’s® or Best Foods® Mayonnaise Light Mayo (earn up to 850 Points)
  • 1/4 cup nonfat plain yogurt (earn 9 Points)
  • 1 tsp. Dijon mustard
  • 1 tsp. lime juice (earn 3 Points)
  • 1 Knorr ® Chipotle Minicube(s), crumbled
  • 4 large eggs, cooked as desired (earn up to 1,020 Points)
  • 1 avocado, thinly sliced (earn 3 Points)
  • 4 slices whole grain bread, toasted (earn 9 Points)

DIRECTIONS

  1. Heat first 5 ingredients in a small saucepan on low heat; set aside.
  2. Layer eggs and avocado on toast, then drizzle with sauce.
