Recipe of the Week: The Best Chicken Salad

This tasty recipe makes for a hearty lunch or dinner. Swap out bread for lettuce for a low-cal, gluten-free option. Either way, earn up to 1,554 Points!

Ingredients

  • ½ cup plain Greek yogurt  (earn 9 Points)
  • ¼ cup mayonnaise (earn up to 850 Points)
  • 1 Tbsp. Dash Salt Free Original Blend (earn up to 680 Points)
  • Rotisserie chicken, meat shredded or cubed (earn 3 Points)
  • 1 celery stalk, finely chopped
  • ¼ cup red onion, finely chopped (earn 3 Points)
  • ¼ cup grapes, halved
  • ¼ cup almonds, chopped 
  • ¼ cup parsley, chopped 
  • Freshly ground black pepper, to taste (earn 9 Points)
  • Lettuce leaves or whole grain bread, for serving (earn 3 Points)

Directions

  1. In a large bowl, combine Greek yogurt, mayonnaise and Dash Salt Free Original Blend.
  2. Add the chopped celery, red onion, grapes, and almonds to the bowl. 
  3. Add the diced/shredded chicken and parsley to the bowl with the other ingredients.
  4. Mix everything together until well combined.
  5. Serve the chicken salad on lettuce leaves as wraps or on whole grain bread as sandwiches.
