Ingredients
- 1 head of broccoli, cut into small pieces (earn 3 Points)
- 1 red bell pepper, diced
- 1 clove of garlic, minced
- 1 quart Egglands Best Liquid Egg Whites (earn up to 1,020 Points)
- 4 tablespoons milk
- 1/2 cup grated Parmesan Cheese
- 1/4 cup and 1 tablespoon oil (earn 9 Points)
- Salt and pepper to taste (earn 9 Points)
Directions
- Preheat oven to 350°.
- In a skillet, heat 1 tablespoon of the olive oil, add garlic and broccoli, toss to coat.
- Add 1/4 cup of water, cover and cook until the broccoli is at desired tenderness. Set aside.
- Pour the egg whites into a bowl, whisk in the milk, grated cheese, salt and pepper.
- To the mixing bowl, add the broccoli and diced red peppers and stir until well incorporated.
- Add 4 tablespoons of oil to coat a 11×9 baking dish.
- Pour egg mixture into the prepared baking dish.
- Place in oven and bake for 25 to 30 minutes until golden brown.
- Remove from oven. Cut into squares. Serve warm or at room temperature.
