Recipe of the Week: Egg Whites Frittata Bake

Ingredients

  • 1 head of broccoli, cut into small pieces (earn 3 Points)
  • 1 red bell pepper, diced
  • 1 clove of garlic, minced
  • 1 quart Egglands Best Liquid Egg Whites (earn up to 1,020 Points)
  • 4 tablespoons milk
  • 1/2 cup grated Parmesan Cheese
  • 1/4 cup and 1 tablespoon oil (earn 9 Points)
  • Salt and pepper to taste (earn 9 Points)

Directions

  1. Preheat oven to 350°.
  2. In a skillet, heat 1 tablespoon of the olive oil, add garlic and broccoli, toss to coat.
  3. Add 1/4 cup of water, cover and cook until the broccoli is at desired tenderness. Set aside.
  4. Pour the egg whites into a bowl, whisk in the milk, grated cheese, salt and pepper.
  5. To the mixing bowl, add the broccoli and diced red peppers and stir until well incorporated.
  6. Add 4 tablespoons of oil to coat a 11×9 baking dish.
  7. Pour egg mixture into the prepared baking dish.
  8. Place in oven and bake for 25 to 30 minutes until golden brown.
  9. Remove from oven. Cut into squares. Serve warm or at room temperature.
