INGREDIENTS
- 3 cups cooked white rice (earn 170 Points)
- 3/4 lb boneless skinless chicken breasts (earn 3 Points)
- 2 Tbsp toasted olive oil, divided
- 1 Tbsp sesame seed oil
- 1/2 cup peas
- 1/2 cup carrots (earn 3 Points)
- 1/4 cup white onion (earn 3 Points)
- 1/4 cup green onions chopped
- 2 cloves garlic , minced
- 2 Tsp minced ginger
- 3 Large Eggs (earn up to 850 Points)
- 3 Tbsp low-sodium soy sauce
- 1 tsp Sesame seeds
PREPARATION
- In one bowl crack and whisk 3 eggs. In another bowl cut chicken into cubes, add salt and set aside.
- Over low medium heat, add olive oil to a pan. Cook onion for about 30 seconds. Then add minced garlic and ginger. Then add carrots and peas and cook for another 3 minutes.
- After this, add rice, soy sauce and sesame seed oil. Once combined, add eggs and chicken.
- To plate add more green onion and sesame seeds.
