Recipe of the Week: Chicken Fried Rice

Which came first: the chicken or the egg? No need to decide with this delicious and easy recipe which features BOTH and can earn you up to 1,029 Points!


  • 3 cups cooked white rice (earn 170 Points)
  • 3/4 lb boneless skinless chicken breasts (earn 3 Points)
  • 2 Tbsp toasted olive oil, divided
  • 1 Tbsp sesame seed oil
  • 1/2 cup peas
  • 1/2 cup carrots (earn 3 Points)
  • 1/4 cup white onion (earn 3 Points)
  • 1/4 cup green onions chopped
  • 2 cloves garlic , minced
  • 2 Tsp minced ginger
  • 3 Large Eggs (earn up to 850 Points)
  • 3 Tbsp low-sodium soy sauce
  • 1 tsp Sesame seeds


  1. In one bowl crack and whisk 3 eggs. In another bowl cut chicken into cubes, add salt and set aside.
  2. Over low medium heat, add olive oil to a pan. Cook onion for about 30 seconds. Then add minced garlic and ginger. Then add carrots and peas and cook for another 3 minutes.
  3. After this, add rice, soy sauce and sesame seed oil. Once combined, add eggs and chicken.
  4. To plate add more green onion and sesame seeds.
