Recipe of the Week: Chicken Cordon Bleu with Glazed Carrots

This recipe will provide a gourmet family meal that’s quick and easy–plus you’ll earn up to 1,038 Points!

First, head to your local Walmart and pick up Barber Foods Cordon Bleu Stuffed Chicken Breasts and prepare as directed. Don’t forget to upload your receipt and earn up to 510 Points!

For the glazed carrots side dish, you will need:

Ingredients

  • 2 Tbsp. olive oil (earn 9 Points)
  • 1 1/2 lbs. small multicolored carrots with tops, peeled, trimmed, and cut into 1/2-in.-thick x 3-in.-long pieces (about 2 1/2 cups) (earn 3 Points)
  • 2 large (1 1/2 oz. each) shallots, quartered with stems intact
  • 3/4 tsp. kosher salt
  • 1/3 cup orange marmalade (earn up to 510 Points)
  • 1/3 cup fresh orange juice (from 1 orange) (earn 3 Points)
  • 2 Tbsp. salted butter, cut into pieces (earn 3 Points)
  • 2 Tbsp. chopped fresh chives

Directions

  1. Cook the carrots: Heat oil in a large skillet over medium-high. Add carrots and shallots to skillet; sprinkle with salt, and cook, undisturbed, until vegetables are lightly browned on one side, about 4 minutes.
  2. Make the sauce: Add marmalade and orange juice, scraping bottom of skillet to loosen browned bits. Stir until smooth.
  3. Cover, and reduce heat to medium-low. Cook, undisturbed, until carrots are tender-crisp, about 3 minutes. Uncover, and increase heat to medium. Cook, stirring often, until sauce is thickened, about 3 minutes.
  4. Add butter, stirring until melted and smooth. Sprinkle with chives, and serve hot.
